This Rum was sourced from an unnamed Australian distillery. It's a beautiful example of a strong and intense "pot still" rum like they are being produced
in Australia for centuries.

Nose: fresh white grapes, some machine oil, orange blossom, quite creamy
Taste: kirsch, apples, american rye whiskey, loads of vanilla beans, pumpernickel, wood spices
Finish: dry and intense, almonds, kirsch again, clove

Located on the main Island Viti Levu and established in 1980, the South Pacific Distillery produces rum fromlocal sugar cane molasses, distilled in a column and inold pot stills. This pure, characterful «Pot Still» rum with its ten years still brings a lot of youth power into your glass.

Nose: cacao, coconut, vanilla, sawdust, jasmine
Taste: chocolate cake, marzipan, many different kinds of nuts, nougat
Finish: dry dark chocolate, many nuts again, honey

The history of the Bielle Distillery dates back into the 1800s. After being mothballed for a long time Dominique Thierry revived it 1975. The Bielle Distillery stands for Rhum Agricoleof the highest quality using sugar cane of countless local peasants. This young Rhum Agricole represents the classicstyle of its distillery perfectly.

Nose: brown butter, vanilla cream, cigars, some honey, dried mangos
Taste: creamy but fresh & tickling, bee pollen, mangos, sandalwood and woody spices: nutmeg & cinnamon
Finish: lime and grapefruit, some pollen again, long and fresh

This traditional Swiss family business, founded in 1867, survived more than 130 years before the production was shut down in 2019. Next to a wide range of unaged traditional Kirsch (Cherry) Brandys, they also filled different kind of casks with their beautiful spirits. When we got the chance of
buying their last ex-rum cask filled with Kirsch, we didn't have to think about it.

Nose: grapes, moscato, orange blossoms & more flowers, fresh almonds, lichee Tasting: marzipan, violets, pears, some cereals, hints of peaches, at some point almost like a speyside style single malt whisky. Finish: hints of pineapples, white pepper, with a little peperoncini spiciness
