In today’s well known manner, the Foursquare Distillery only started operating 1996. It is one of the most modern distilleries in the caribbean and uses both, pot stills and column stills, for its distillation process. The barbados typical «medium body» style, exemplified in this rum, derives from the blending of column- and pot still rum.

Nose: Vanilla, popcorn, rubber, a little malty, baby powder.
Taste: Burnt toast, molasses, nut mix, some sunflower seeds, fresh coconut juice, hints of cinnamon. Finish: More sunflower seeds, dry, spicy and nutty with some candied fruits.

The rum-style originates from the Island of Java, it is also named Batavia Arrack and has a very distinct character. During the fermentation process, a cooked rice mixture is added to support the yeast. After distilled in a Pot Still, the rum has been aged for one year in big teak wood casks on site. For the rest of its maturation the rum was then filled into ex-bourbon casks and aged in Europe.

Nose: Nuts, Barack (Hungarian apricot brandy), rubber, pears, canned fruit salad, lychee. Taste: More lychees, burnt tyres, burnt sugar, burnt overripe fruits of all kinds, possibly fatal.
Finish: Still a lot of burnt stuff, especially rubber, some dried pears.

The Clarendon Distillery, as we call it today, are technically two distilleries. The Monymusk Distillery, originally opened in 1949, runs two big pot stills and associated mash tuns. Clarendon, the eponymous of the two, has been producing rum on a huge column since 2009. This rum was originated by the pot stills of the Monymusk Distillery and represents the “heavy body”, aromatic Jamaican style.

Nose: Nose: Ripe jackfruit, new rubber, brine and hints of stilton. Taste: Stilton, stilton, stilton, overripe bananas, pineapples, a little salty. Finish: More bananas (dried), lychee, glue, rubber, still a little salty.

Founded in 2003 by LVMH, the Ten Cane distillery shut down production in 2015. They used fresh cane juice and worked with long fermentation before the rum was distilled twice in copper pot stills - one big still of 10’000 litres and a small one for the second distillation. A very atypical style for Trinidad and as a single cask bottling in cask strength very interesting to taste.

Nose: Bourbon Whiskey, vanilla ice cream, hints of sawdust and some flowery notes.
Taste: Clean and fresh, brown sugar, flowerhoney, dried apricots. Very dry but sugary finish, like tasting sugar without the sweetness.
